Ingredients (Serves 4):
- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
- ½ tsp smoked paprika
- ½ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 lb asparagus, trimmed
- 1 tsp olive oil (for asparagus)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions:
- Step 1: In a large bowl, mix olive oil, garlic, lemon zest, lemon juice, smoked paprika, red pepper flakes, salt, and pepper.
- Step 2: Add shrimp to the marinade, toss to coat, and let sit for 10 minutes.
- Step 3: While shrimp marinates, bring a pot of water to boil. Steam asparagus for 3–4 minutes until tender-crisp. Drizzle with 1 tsp olive oil and set aside.
