Ingredients (Serves 4):

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • ½ tsp smoked paprika
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 lb asparagus, trimmed
  • 1 tsp olive oil (for asparagus)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions:

  • Step 1: In a large bowl, mix olive oil, garlic, lemon zest, lemon juice, smoked paprika, red pepper flakes, salt, and pepper.
  • Step 2: Add shrimp to the marinade, toss to coat, and let sit for 10 minutes.
  • Step 3: While shrimp marinates, bring a pot of water to boil. Steam asparagus for 3–4 minutes until tender-crisp. Drizzle with 1 tsp olive oil and set aside.
  • Step 4: Heat a grill pan or outdoor grill over medium-high heat. Grill shrimp for 2–3 minutes per side until pink and opaque.
