Ingredients (Serves 4):
- 2 tbsp fresh parsley, chopped
- 1 ½ tbsp fresh thyme, chopped
- 1 lemon, sliced
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- ⅓ cup olive oil
- 2 lbs boneless skinless chicken breasts
- 1 lb Brussels sprouts, halved
- 1 red onion, sliced
- ½ tsp smoked paprika
- ¾ tsp red pepper flakes
- Salt and pepper, to taste
Instructions:
- Step 1: Preheat oven to 425°F (218°C). Chop parsley and thyme. Slice lemon and red onion.
- Step 2: In a small bowl, whisk together parsley, thyme, garlic, mustard, 4 tsp olive oil, paprika, salt, and pepper. Coat the chicken with this mixture on all sides.
- Step 3: Place the chicken in the center of a baking sheet, layering half the lemon slices on top. Bake for 15 minutes.
- Step 4: Meanwhile, toss Brussels sprouts and red onion in a bowl with the remaining olive oil, red pepper flakes, salt, and pepper.
- Step 5: Remove the chicken from the oven. Spread the Brussels sprouts and onion around it. Return to the oven and bake for another 12–14 minutes, or until the chicken reaches 165°F (74°C) and vegetables are tender.
- Step 6: Let rest for 5 minutes, then serve hot.
