Ingredients (Serves 2):

  • 3 tbsp chia seeds
  • 1 cup unsweetened almond milk
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • 1 tbsp almond butter
  • ½ tsp stevia or monk fruit sweetener (optional)
  • 2 tbsp crushed almonds (for topping)
  • Fresh berries (for garnish)

Instructions:

  • Step 1: In a bowl, whisk together chia seeds, almond milk, cinnamon, vanilla, almond butter, and sweetener (if using).
  • Step 2: Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  • Step 3: Cover and refrigerate for at least 2 hours or overnight until thickened.
